2 whole chicken breasts (1 lb each)
1 tbsp butter or margarine, melted
8 oz rotelle or penne pasta
3 c small fresh broccoli florets
2 medium size tomatoes, cut into wedges

Preheat oven 375

Arrange chicken breasts in a single layer in a roasting pan; brush with butter. Bake for 20 -25 minutes until chicken is springy to the touch and just cooked through. Chill until cool enough to handle then tear into narrow strips, discarding skin and bones. Meanwhile, cook pasta according to package directions, add broccoli to pasta during the last 2 minutes of booking time. Drain; place under running cold water to cool and to prevent pasta sticking; drain again.

Add all ingredients in large bowl with enough basil mayo to moisten. Toss to combine.
 

Basil Mayo

1/2 c toasted walnut
1 c. mayo
1/2 c. packed basil leaves
1/2 c. grated Parmesan cheese
1 tbsp lemon juice
2 tsp coarsley chopped garlic

Directions:
Directions:
Toast walnuts in single layer on baking sheet in 350 oven for 5-7 minutes. Cool and then place with remaining ingredients in blender or food processors. Process until smooth.
