4 cups vinegar
2 cups water
1 ½ cups sugar
1 tbsp pickling salt
3 tbsp whole mixed pickling spice
Small, young beets

Directions:
Directions:
Wash and cover the beets with boiling water, cook until tender. Drain and remove skins. Pack in sterilized jars. Boil together vinegar, water, sugar, salt, and spice (in a bag) for 5 minutes. Remove bag and pour over beets to completely cover. Seal.
