1/4 cup olive oil
1 medium zucchini, chopped
1 cup yellow squash, chopped
1 cup onion, chopped
1/2 cup green bell pepper, chopped
2 cloves garlic, minced
1 28 oz. can red kidney beans, drained
1 16 oz. cans tomatoes, diced
1 8 oz. can tomato sauce
3 teaspoons chili powder
1/4 tsp. salt
1/2 tsp. crushed basil
1/4 tsp. pepper

Directions:
Directions:
Saute onion, garlic, squash, zucchini and green pepper in olive oil until tender - about 4-5 minutes. Add all remaining ingredients and bring to a boil. Cover, reduce heat and simmer for 20 minutes.

Serve with shredded cheese, sour cream and fresh cilantro if desired.
