1 ham bone (leave meat on bone while it cooks)
4-5 cups diced ham (leftovers work nicely)
2 c. dry navy beans
2 c. celery, chopped
2 c. carrots, chopped
1 large onion, finely chopped
3 cloves garlic, finely minced
4 sprigs fresh thyme, or 2 tsp. dry
¼ c. fresh parsley, or 1 Tbsp. dry
½ tsp. black pepper
8-9 cups chicken stock
1 Tbsp. olive oil

Directions:
Directions:
Prepare dried beans by soaking them in cold water, 8-10 hours or overnight. Drain and rinse.
In a large pan, heat olive oil and saute celery, carrots, onion, and garlic until tender.
Place ham bone, soaked and rinsed beans, and diced ham in crock pot. Add chicken stock, sauteed vegetables, and herbs. Cook on low 6-8 hours.
Can also be cooked on stove top by adding prepared ingredients to a large stock pot, bringing to a boil, then reducing heat to simmer, covered, for 2-3 hours.
