Yellow squash, sliced, to make 4 cups
cup onion, chopped
1 egg, slightly beaten
⅓ cup milk
cup Pepperidge Farm stuffing mix
cup butter, melted
cup shredded cheddar cheese
salt & pepper
Ritz crackers

Directions:
Directions:
Cook sliced squash with onions in water until tender. Drain and mash with a potato masher or fork. Add all ingredients together except the stuffing mix and mix well. Fold in the stuffing mix. Place in greased 2 quart baking dish. Top with desired amount of Ritz crackers. Bake at 350 for 20-30 minutes.
