2 c. uncooked zucchini, sliced
2 c. sugar
1 c. salad oil
3 eggs, beaten
3 c. sifted flour
1/4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 tsp vanilla extract

Directions:

Chop zucchini in food processor until mixture has no large chunks. Drain well. Mix all ingredients. Pour into greased muffin tins (or paper liners). Bake at 350º for about 30 minutes until golden brown.
