6 C. thin sliced zucchini
1/4 C chopped onion
1 C Sour cream
1 C finely grated carrot
1/2 C grated cheddar cheese
1 8 oz package herb stuffing
1/2 C melted butter

Directions:
Directions:
Boil squash and onion until tender, drain
Mix carrot, cheddar cheese together stir in squash mixture
transfer to greased casserole dish
Mix in 1/2 of stuffing mix, stir into squash mixture
Combine butter and remaining stuffing mix, pour over squash mix

Bake 350, 30-45 mins until brown, cool 10 mins before serving
