3 c corn meal mix
4 jalapeno peppers, chopped, seeds removed
1 t salt
3 eggs beaten
3 t sugar
½ c vegetable oil
1 onion chopped
1 c cream style corn
1½ c milk
1½ c longhorn cheese, grated

Directions:

Mix all ingredients well and bake in an 8x12 in. pan which has been well greased. Bake at 475º for 45 min.

You can buy a Mexican corn bread mix at the store (Martha White Brand) but this is a better product with a little work.
