2 eggs
1/2 c (less 1 1/2 t. ) flour
1/2 c. skim milk
1 T + 1 t. lemon juice
dash of nutmeg

Directions:
Directions:
Preheat oven 425

In medium bowl beat eggs until fluffy. Alternately beat in flour, and milk, lemon juice and add nutmeg (mixture should be lumpy)

Melt butter in 12" skillet coating pan. Pour batter into pan and briefly cook both sides. Immediately transfer to upper oven rack and bake 15-20 minutes. Sprinkle pancake with sugar and bake and additional minute.
