"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
3 cups sugar
2/3 cup clear Karo syrup
1/2 cup water
2 large egg whites (room temperature)
1/2 teaspoon vanilla (I use vanilla butter and nut flavor)

Directions:
Directions:
Mix sugar, Karo and water in a boiler. Bring to boil, stirring often. When it spins a thread when dropped from the spoon, remove from heat and add flavor. While the mixture is cooking beat the egg whites until they form a peak. Very slowly pour the mixture over egg white while continuing to mix. (You may need to have someone to pour the mixture while you run the mixer as it takes a few minutes to complete the process)after all the syrup has been added the candy should be getting pretty stiff. When it looks shinny you can use a large spoon to continue stirring. When the candy begins to dry out (no longer shinny) it is ready to drop by spoonfuls on wax paper.

If you fail at this candy the first time don't give up. It may take several try's, but you will perfect it.
