2 c. cornmeal
3/4 tsp salt
2 eggs
1/4 c. melted lard
3 tsp baking powder
1/2 tsp baking soda
1 c. buttermilk

Directions:
Directions:
Preheat oven 425º

Stir together dry ingredients. Add eggs, milk and melted lard. Beat with electric or stand mixer until just smooth, about 1 minute. Pour into greased 10 inch skillet with ovenproof handle. Bake for 20-25 minutes. Serve warm with butter.
