1 frozen pie crust - baked
1/2 cup sugar
1/4 cup cornstarch
2 cups half & half
4 egg yolks
3 Tablespoons butter
1 cup sweetened flaked coconut
2 1/2 teaspoons vanilla
2 cups whipping cream
1/3 cup sugar
1/2 cup toasted coconut

Directions:
Combine 1/2 cup sugar and cornstarch in a heavy saucepan. Whisk together half & half and egg yolks. Gradually whisk egg mixture into sugar mixture; bring to a boil over medium heat whisking constantly. Boil gently 1 minute and remove from heat.
Stir in butter, 1 cup coconut, and 1 teaspoon vanilla. Cover with plastic wrap and let stand for 30 minutes. Pour into crust and chill for 30 minutes.
Beat whipping cream at high until foamy, gradually add 1/3 cup sugar and remaining 1 1/2 teaspoons vanilla and beat until soft peaks form. Spread on pie and sprinkle with toasted coconut

One of Shelby's favorite desserts is coconut cream pie. This recipe is the best one I have found for that. Hope she makes one and brings me a sample!
