3 cups frozen hash browns
¾ cup Monterey Jack cheese, shredded
1 cup ham or bacon, cubed and cooked
¼ cup green onion, chopped
4 eggs, well beaten
1 - 12 oz can evaporated milk
¼ tsp black pepper
½ tsp salt

Directions:
Directions:
Grease a 2 quart rectangular baking dish. Arrange potatoes evenly on bottom of baking dish. Sprinkle with cheese, ham, and onions. Combine milk and eggs and seasonings. Pour over potatoes and cheese. Refrigerate overnight. Bake at 350º for 40 - 50 minutes until set. Let rest 5 minutes.
