1 1/2 pounds steak (Flank works good but Filet better) - sliced thin against the grain
1/2 cup Soy sauce
3 Tablespoons sherry
2 Tablespoons brown sugar
2 Tablespoons cornstarch
1 Tablespoon minced ginger (fresh is best)
2 cloves garlic - minced
1 teaspoon red chile paste or a few dashes of red chile oil
2 Tablespoons canola oil
1 medium yellow onion sliced
2 red pepper sliced
1 Tablespoon diced fresh jalapeno pepper

Directions:

Mix together soy sauce, sherry, brown sugar, cornstarch ginger, garlic, and chili paste. Place the sliced beef into this mix and toss to coat. Set aside to marinate for 10 minutes. Heat 1 tablespoon oil in large skillet over medium to med high heat. When hot put onions in and cook for 1 minute. Remove to a plate. Heat skillet again and do same with red peppers and jalapeno.Let skillet heat up again and add another tablespoon of oil. Fry steak in batches - 30 seconds on a side - flip and 30 seconds on other side - remove to plate. When all meat is cooked put skillet back on low heat and add all vegetables and meat back to it. Pour in the remaining sauce that the meat marinated in and stir and simmer on low until it starts to thicken. Serve over rice.
