½ c milk (buttermilk is best)
1 egg, beaten
1 ½ c flour
1 ½ tsp. pepper
1 ½ tsp. salt
1 ½ tsp. garlic powder
4 tsp. paprika
1 tsp. poultry seasoning
1 tsp. oregano
1 tsp. onion powder
3 c canola oil
1 c chicken broth
1 c milk
4 lbs. chicken with skin on (cut breasts in ½ and separate drumsticks from the thigh)

Directions:
In a medium bowl beat the ½ cup of milk with the egg. In another medium bowl or a resealable bag, mix the flour with all of the spices. Heat oil in a large pot or wok to 365º. coat chicken, 1 piece at a time, in the dry mixture then in the milk mixture then back in the dry mixture. Take care to get the dry ingredients in all the openings and under loose skin. Reserve remaining dry mixture. Carefully place this chicken in the hot oil and fry until golden on all sides. About 30 minutes. Remove chicken and drain on paper towels. Pour the oil into a large jar for future use keeping 2 tbsp. for the gravy. Over a low heat stir in 2 tbsp. of the dry mixture. Stir constantly for about 2 minutes. Whisk in the chicken stock, scraping all the burnt bits from the bottom of your pot. Stir in the 1 cup of milk and bring to a boil over a high heat stirring constantly. Reduce heat to low and simmer for about 5 minutes.
