8 oz cream cheese, softened
1/2 c. sour cream
1 c. crumbled feta
Juice of 1/2 lemon
2 c. shredded mozzarella, divided
1 c. frozen spinach, defrosted and squeezed dry
2/3 c. Roasted red peppers, drained and chopped
kosher salt
pepper

Preheat oven 350

In a large bowl, combine cream cheese, sour cream, feta and lemon juice. Stir until the mixture is evenly combined and as smooth as possible*
Stir in 1 1/2 cups mozzarella, spinach and most of the roasted red peppers (reserve some for topping) then season with salt and pepper.
Transfer mixture to a small baking dish. Top with remaining mozzarella and peppers.
Bake until bubbly, about 15 minutes. Broil for 3 minutes to get a beautiful brown top.
