2 small lemon jello - 2 1/2 cups boiling water - 1 bag fresh cranberries
1 whole orange - 2 cups sugar - pinch of baking soda
1 can crushed pineapple, drained, squeezed dry
2-3 gala apples, peeled & cored, finely chopped
1 c finely diced celery - 1/2 c chopped walnuts

Dissolve jello in boiling water, stir well, cool, set aside. Zest an orange, then peel white membrane off, cut into sections, remove any seeds. Place cranberries & orange sections in food processor, process well, may have to do in stages so no large chunks remain. In a large pot, combine cranberry mixture & sugar, bring to a boil for 2 minutes, remove from stove, add a pinch of baking soda, stir...it will foam. Use tablespoon to skim off foam. Add squeezed-dry crushed pineapple, dissolved jello, apples, celery & nuts, mix well. Pour into covered container. Chill till set. Makes a lot but keeps well.

NOTE: this is primarily a holiday recipe when cranberries are in season.
