lb butter ( C)
1 C water
1 C flour
tsp salt
4 eggs

Directions:
Directions:
Combine all 4 ingredients, add butter to boil water. Cook stirring constantly until mixture is smooth and makes a ball that does not separate.

Cool slightly.

Add 1 egg at a time beating after each one.

Drop a round spoonful on greased cookie sheet or a longer amount to make an eclair.

Bake 450, 15 minutes, then 325, 25 minutes. Don't rush them.

Fill with your choice of ice cream or banana instant pudding. Frost with chocolate frosting. Can dust with powdered sugar.
