1 oz. Koloa Gold Rum or any other Gold rum
½ oz. Orange Liqueur
1 oz. Fresh Squeezed Lime Juice
Splash Vanilla Simple Syrup (Directions below)

1 oz Koloa Dark Rum or any dark dum
Pineapple slice and lime wedge fo garnish

Vanilla Simple syrup recipe -
Bring 1 cup sugar and 1 cup water to a boil in a saucepan over medium heat, and cook, stirring, until sugar has dissolved. Let cool completely. Stir in 1 1/2 tsp vanilla extract. Makes 1 1/2 cups (enough for several drinks and easily stores)

Mai Tai -
Combine first four ingredients in a cocktail shaker. Shake well. Pour into a highball glass

Add a float of Koloa Dark Rum. Garnish with lime wedge and pineapple.

In Kauai, Hawaii, there is the Koloa Rum company with a fun tasting room and shop. Shari and I enjoy the variety of Koloa rums when visiting. The is just one variant of mai tai and we encourage you to experiment.
