1 c. Almond butter
3 bananas, mashed (1 c.) plus 1 banana thinly sliced
3 large eggs, room temperature
c. sugar
tsp kosher salt
tsp baking soda
1 tsp apple-cider vinegar

Directions:
Directions:
Preheat oven to 400

Line a standard 12-cup muffin tin with baking cups.
In a medium bowl, whisk together almond butter, mashed bananas, eggs, sugar, salt, baking soda, and vinegar until just combined.

Divide batter evenly among muffin cups; top each with 2-3 banana slices (optional). Bake until golden and tops spring back when lightly touched, about 18 minutes. Let cool 5 minutes in tin, and then transfer to wire rack and let cool completely.

For additional crunch, top each muffin with 1 tbsp granola before baking.

The first time I made these I was shocked how good they were with no flour! I think you could add additional nuts or dried fruit such as cranberries to the batter as well.
