For dough:
pound (2 sticks) butter
2 eggs
3 teaspoon baking powder
cup milk
cup sugar
1 cup flour
1 teaspoon vanilla
Pinch of salt

For cheese filling:
1 pound farmers cheese
1 pound creamy cottage cheese
1 tablespoon lemon juice
2 eggs
cup sugar
Salt to taste

Directions:
Directions:
1. Melt butter in large casserole dish.
2. Combine remaining ingredients for dough.
3. Pour butter into dough mixture, and mix until creamy. It will be watery.
4. Put 1/2 of dough on bottom of casserole dish.
5. Mix cheese filling and pour on top of dough. Put other 1/2 of dough on top of cheese.
6. Bake for 1 1/2 hours at 300 or until brown.

This Blintz Casserole from my Aunt Sandi is an easy recipe that everyone loves. She is not my real relative, but my parents' best friend, so chosen family. She and her husband had 3 boys and we had 3 girls. She is also the best baker around.
