Dough:
5 ⅓ cups flour
2 cups margarine or butter
4 tsp. cream of tartar
2 tsp. baking soda
½ tsp. salt (optional)
1 tsp. vanilla
4 eggs
2 ½ cups sugar

Coating
1 tsp. cinnamon
½ cup sugar

Directions:
Directions:
In a large bowl, mix the dough ingredients at low speed, beating until well blended. Shape dough into a ball and wrap in plastic wrap. Refrigerate for 2 hours or can left in the refrigerator for one week. 
Preheat oven to 350º F. In a small bowl, mix cinnamon and sugar. Roll dough into 1½ inch balls, then roll in cinnamon and sugar to coat. Place balls 2 inches apart and press cookie balls down with fork or fingers. 
Bake for 10 to 12 minutes until lightly brown. Cookies must be light brown to be done.
