Green Chili Stew Recipe

2 lbs Ground Beef
3 Bay leaves
2 Garlic cloves
12 Hatch green chilis
1 Jalapeno
1/2 cup Onion
1/2 tsp Oregano
3 Potatoes, diced 1/2-inch, large
1 (10 ounce) can Tomatoes
6 cups Chicken broth
2 tbsp Flour
1 tsp Pepper
1 tsp Salt
2 tbsp Vegetable oil
1/2 tsp Cumin
2 tbsp Butter
Beer, Wine & Liquor
6 oz Beer

1. Brown ground beef with onions, garlic, salt and pepper in oil (in a large pot). 2. Add broth, half a can of beer, spices and bring to a simmer (let simmer for 1 hour). 3. Chop green chili and add to the pot (including the seeds). Let simmer for 30 minutes then add the tomatoes & potatoes (add a cup of hot water if needed). 4. Simmer until potatoes are done.
5. melt butter in a small skillet & add flour, cook for 2 minutes stirring constantly -- add to the pot. **May also be cooked for 6 hours on low in crockpot. (Pre-brown ground beef first)
