2 Pounds of Lean Ground Beef
1 tbsp. Flour
2 tbsp. Lard or Shortening
1 Large yellow (Spanish) Onion (Chopped in large pieces)
2 C. Roasted and diced Green Chile Peppers (Medium-Hot)
1 15oz Can of 'Petite Diced' Tomatoes. Non-seasoned.
3 C. Potatoes (peeled and diced)
6 C. Chicken Broth
4 Good Pinches of Garlic Powder (not Garlic Salt)
3 Good Pinches of Salt, then to taste

** 3 Ears of Corn on the Cob** (See Personal notes)

1. Cook Ground Beef and Shortening in a 6 qt. Pot on Medium-high heat.

2. After Beef is fully cooked DO NOT DRAIN, sprinkle Flour over the Beef until evenly coated, stirring constantly for about a minute to avoid flour from burning.

3. Add Potatoes, Chicken Broth, Tomatoes and Onions then bring to a light boil.

4. Add Green Chile and Garlic Powder, lower the heat and simmer until Potatoes are tender.

5. Add Salt, then to taste.

*Can Substitute Ground Turkey for Beef.
*Makes a great "Cook-Out" food as it needs very little attention while cooking.

*Reheat on the Stove or Microwave

*Freezes well.

*Refrigeration shelf life is about 6 days.

**Corn on the Cob can be added by cutting each ear into 4 pieces then add during #3 in the directions. (Corn will get sweeter and sweeter the longer it cooks, therefore changing the flavor).
