3 lb chuck roast, cubed
1 onion, halved and sliced
3 medium potatoes (red, yellow, or white), cut into large chunks
1 lb bag of baby carrots or 6 large carrots, peeled and cut into chunks
1 - 2 c beef broth, if necessary
1 stalk of celery

Directions:
Directions:
Preheat oven to 300.

Place meat in bottom of large baking pan. Surround roast with potatoes, onions, celery, and carrots. Pour broth around the contents. Tightly cover with aluminum foil and bake for 1 1/2 hours.
