Pumpkin Walnut Cookies Recipe

½ cup margarine
1 ½ cups brown sugar, packed
2 large eggs
1 cup cooked pumpkin
1 tsp. vanilla
1 tsp. grated lemon peel
1 tsp. lemon juice
2 ½ cups flour
3 tsp. baking powder
1 tsp. salt (optional)
1 ½ tsp. pumpkin spice
¼ tsp. ginger
1 cup chopped walnuts

Cream margarine and sugar together until fluffy. Beat in eggs one at a time. Stir in pumpkin, vanilla, lemon peel and juice. Combine flour, baking powder, salt and spice. Blend into butter mixture. Stir in walnuts. Drop by TBSP. onto greased baking sheets 2 inches apart. 
Bake at 350º F for 12 to 14 minutes. Do not under bake.
Decorate with vanilla butter icing.
