2 tsp butter
1 tsp vegetable oil
2 Spanish onions, sliced
¼ tsp sugar
¼ tsp salt
1 T sherry or apple vinegar
3 strips of bacon
¾ C shredded gruyere
½ C sour cream
½ C mayo
¼ tsp pepper

Directions:
Directions:
Preheat oven 400º.
Melt butter and oil in large skillet over med-high heat. Add onions, sugar, and salt. Cook until onions turn deep golden brown, about 25 minutes.
Stir in vinegar to deglaze pan.

In separate pan, cook bacon until crisp. Combine cheese, sour cream, mayo and pepper in bowl. Stir in onions and crumbled bacon.

Transfer mixture to a 2 C baking dish.

Bake 20 minutes until mixture is bubbly and top is lightly golden. Serve with pita chips.
