1 lb brussel sprouts, halved
1 yellow onion, sliced
4 carrots, chopped 1"
4 large red potatoes, chopped 1"
4 T olive oil
2 T herbs de provence
1 T sea salt
1 T garlic powder
Ground pepper to taste

Directions:
Directions:
Combine all vegetables, oil and herbs in a 9 x 13 baking dish. They can overlap but try to spread veggies out.

Cover with foil and roast at 350º for 25 minutes, stirring half way.

Uncover and roast at 375º for 10-20 minutes longer, stirring every 10 minutes until veggies caramelize.

Season with parmesan and additional sea salt/pepper.
