Ingredients:  
½ cup oil
1 cup white sugar
Rind (zest) of one lemon
2 eggs beaten
1 ⅔ cup flour
Pinch of salt
1 tsp. baking powder
½ cup milk

Directions:
Directions:
Cream oil and sugar. Add lemon rind and eggs. Beat well. Add dry ingredients  alternately  with  milk  starting  and  ending  with  dry. Grease and flour loaf pan. 
Bake at 350º F. for 45 minutes.
Glaze with ½ cup icing sugar and juice of one lemon.
