I Oreo crust
¾ cup heavy cream
pinch salt
6 oz. semisweet or bittersweet chocolate, chopped
3 Tbsp butter, cold
1 tsp vanilla
2 cups whipped cream (Whipped from heavy cream, with a little sugar and vanilla to flavor)

Microwave cream and salt in glass measuring cup on high power until bubbling, about 90 seconds.
Place chocolate in food processor (or blender), and with machine running, gradually pour hot cream mixture through the feed tube and process until smooth--about 1 minute. With machine still running, add butter 1 Tbsp at a time, and process until smooth, about 2 minutes. Add vanilla and continue to process until smooth and thickened--1-2 minutes longer. Transfer to medium bowl, and refrigerate until it has consistency of soft frosting (check every 15 minutes...you should be able to stir it). Remove 1/2 cup whipped cream and reserve for garnish. Scrape chilled ganache into bowl with remaining whipped cream, whisk together and beat at medium high speed until smooth, about 30 seconds. Scrape down side of bowls to ensure no pockets of whipped cream remain.
Pour into an Oreo crust, top with whipped cream, and serve! It's fun to add other toppings in for crunch or flavor: peppermint, butterfinger, almonds, etc.

My sister-in-law Amy gave me this recipe for chocolate mousse. It is so creamy and delicious. I especially love it in the summer because it requires no cooking!
