6 medium potatoes
2 c. grated cheddar cheese
1/2 c. butter
1 pint sour cream
1/4 c. chopped pimento
Salt and pepper

Directions:
Directions:
Grease 2 quart casserole dish. Cook potatoes with jackets on until tender. Cool, peel, and grate.

Reserve 1/2/ c. cheese for topping.

In a large bowl combine potatoes, remainder of cheese and remaining ingredients. Beat until well blended. Spoon into casserole and top with cheese.

Bake at 350 for about 40 minutes.

Can be made in advance and refrigerated. Will have to bake longer if this is done.

Jean, this is a special request from my family every Thanksgiving and Christmas. And the idea of "make ahead" mashed potatoes is a great idea to me.
