2 lb carrots, cut and boiled 25 minutes, then mashed or chopped in food processor
6 eggs
⅔ cup sugar
6 Tbsp flour
2 tsp vanilla
2 tsp baking powder
2 sticks butter or margarine, melted
Dash of cinnamon

1. Preheat oven to 350º.
2. Mix all soufflé ingredients.
4. Add topping (below).
5. Bake uncovered for 45 minutes to 1 hour.

½ cup corn flake crumbs
½ cup chopped walnuts
6 Tbsp brown sugar
4 Tbsp melted butter
