1 pkg dry yeast
cup hot mashed potatoes
cup sugar
1 cup milk, scalded
cup warm water
cup shortening
1 tsp salt
1 egg, slightly beaten
4 cups flour

Directions:
Directions:
Soften dry yeast in warm water. Combine potatoes, shortening, sugar, salt and hot milk. Cool to lukewarm, add softened yeast and egg. Stir in 2 cups flour. Beat well. Stir in remaining 2 cups flour (or enough to make a soft dough) knead on lightly floured board until smooth and elastic (6-8 minutes). Place in lightly greased bowl, turning once to grease top. Cover and let rest until double. Punch down and shape in ball, cover and let rest 10 minutes. Shape into rolls, place on greased cookie sheet. Let rise one more time for 30 minutes. Bake at 400 for 10-12 minutes
