2 1/2 cup peeled eggplant
18 saltines, crumbled
1/2 cup shredded sharp cheese
1/4 cup chopped celery
2 tbsp chopped pimento
dash pepper
1 tbsp melted margarine
1/2 tsp salt
1 cup light cream

Directions:
Directions:
Cook eggplant in boiling water 10 minutes. Drain, combine with remaining ingredients. Turn into a 1 quart casserole dish. Bake 350 for 45 minutes.
