Carrot Cake Bar Recipe

2 c. sugar
1 1/2 c. oil
4 eggs
3-4 1/2 oz baby carrots
2 1/2 c. flour
2 t. soda
2 t. cinnamon
1 t. salt
1 c. nuts
1 c. cocoanuts

1 8oz. cream cheese
1 stick butter
3 c. powder sugar
1 t. vanilla

Sift dry ingredients. Add all other ingredients to dry bowl except nuts and cocoanut.
Beat 3-4 minutes
Add nuts and cocoanut.
Bake in 10x15 @ 350 for 40 minutes

Beat all frosting ingredients until smooth and pour over cake when cooled.
