1 lb medium shrimp, peeled and deveined
2 tbsp salt
¾ cup juice total of lemon, lime, grapefruit or orange, in combination or your choice
1 cup finely chopped red onion
½ cup chopped cilantro
2 cloves garlic, minced
4 sliced radishes
2 tomatoes, chopped
1 avocado, chopped
1 cucumber chopped
½ cup Noi Sauce
salt and pepper

NOI SAUCE: 6 jalapeños
2 garlic cloves
¼ cup white vinegar
1 small red onion
1 tomato
¼ cup lime juice
salt and pepper
Grind the jalapeños, garlic, lime juice, vinegar and ½ the red onion in a processor or blender until medium pureed. Add 1 tomato, and the other half of the onion and coarsely chop, so it is a fairly chunky salsa.

You can use either raw or cooked shrimp, if you want to use raw and cook it, boil 10 cups of water with 2 tbsp salt, add the shrimp and cook for 1 minute. Remove shrimp with a slotted spoon and place in a bowl of ice water to stop the cooking. Then cut up the shrimp and mix with citrus juices. Add rest of ingredients and marinade for 30 minutes.
