Salmon (Fresh or canned, I generally use Honey Boy Red Salmon)
1 egg per can of salmon
1 c. Italian seasoned bread crumbs or 1 sleeve of crushed saltine crackers per can of salmon
c. Italian seasoned bread crumbs (for dredging)
1 c. flour
2 tsp. cornstarch
oil

Directions:
Remove bones from canned salmon. If using fresh salmon, cook, debone and flake. Combine salmon, bread crumbs and egg(s). You want a consistency that allows the patties to stick together without being too moist or too dry. Add additional bread crumbs or another egg to achieve the desired consistency. You can wear gloves or put a few drops of oil in your hands so that the mixture does not stick to your hands while forming the patties. After forming each patty dredge them in the flour, bread crumb and cornstarch mixture to coat. Pour about 1" of oil in an and heat on Medium-High. Cook the patties on both sides until lightly brown. Drain on paper towels. Serve with ketchup and/or lemon juice.
