- 2 eggs
- ¾ cup of all purpose flour
- ½ tsp of salt
- 1 cup of milk
- ¼ cup of vegetable oil

Directions:
Directions:
- Break eggs into blender. Blend for 2-3 minutes.
- Sift flour and salt into a bowl. Add flour mixture and ¼ cup of milk to the blender. Blend until smooth. Scrape the mixture off
the sides of the blender, add the remaining ¾ cup of milk, and blend for another 2-3 minutes.
- Refrigerate batter 1-2 hours before cooking.
- Preheat oven to 450º.
- Pour 2 tbsp of oil into each of 6 muffin cups. Place muffin pan into oven until oil is very hot. Oil should be smoking.
- Quickly and carefully pour batter into each muffin cup.
- Bake for 20-30 minutes until brown.

Serve as a side with Turkey, vegetables, potatoes and gravy!!
