- 2 eggs
- cup of all purpose flour
- tsp of salt
- 1 cup of milk
- cup of vegetable oil

Directions:
Directions:
- Break eggs into blender. Blend for 2-3 minutes.
- Sift flour and salt into a bowl. Add flour mixture and cup of milk to the blender. Blend until smooth. Scrape the mixture off
the sides of the blender, add the remaining cup of milk, and blend for another 2-3 minutes.
- Refrigerate batter 1-2 hours before cooking.
- Preheat oven to 450.
- Pour 2 tbsp of oil into each of 6 muffin cups. Place muffin pan into oven until oil is very hot. Oil should be smoking.
- Quickly and carefully pour batter into each muffin cup.
- Bake for 20-30 minutes until brown.

Serve as a side with Turkey, vegetables, potatoes and gravy!!
