2 sticks butter, room temp - 2 c finely crushed graham cracker crumbs
1 cup smooth peanut butter - 1 lb (box or bag) powdered sugar - 1 tsp vanilla
1 bag chocolate discs for melting & dipping
OPTIONAL: tassie size paper liners - colored sprinkles

In a medium bowl, combine all ingredients, except chocolate. Mix well. Form into 1" or smaller balls. Place on a parchment lined cookie sheet & chill for 30 minutes. When ready for dipping, melt chocolate in microwave safe bowl in 10 second increments, stirring till fully melted...do not overdo the process. Using a toothpick, dip each ball 3/4 way into chocolate for buckeye effect or all the way for a fully covered chocolate ball effect. Let excess chocolate drip from ball for a neater looking ball. Place on a small parchment lined sheet, if using sprinkles, lightly sprinkle on tops of fully dipped chocolate balls for a festive holiday look & place in frig to set chocolate. Use tassie size paper liners for presentation. Makes about 90 - 100.
