4 to 5 lbs. beef brisket
Salt and pepper to taste
1 medium onion, diced
3 cloves garlic, minced
1 jalapeno pepper, seeded, minced
2 c. hickory or mesquite smoke-flavored barbecue sauce
1/4 c. Worcestershire sauce
1/4 c. white sugar
2 Tbsp. brown sugar
2 Tbsp. liquid smoke flavoring
1 tsp. salt

Season brisket with salt and pepper. In large Dutch oven, sear brisket on all sides over high heat. Reduce heat and add enough water to cover. Add onion, garlic and jalapeño pepper. Bring to boil, lower heat and simmer 2 hours. Remove meat reserving liquid. Preheat oven to 250º. Return brisket to Dutch oven. Combine barbecue sauce, vinegar, Worcestershire sauce, brown sugar, liquid smoke, and salt. Pour over brisket, cover and bake 4 hours. While brisket is cooking, place reserved liquid in saucepan and reduce by 2/3 over medium heat. Keep warm. Remove brisket from Dutch oven and allow to cool 15 minutes. Before serving, pour liquid over sliced brisket.
