1 c chopped onion
½ c chopped green pepper
½ lb sliced smoked sausage
1 Tbsp oil
14 ½ oz. canned chicken broth
14 ½ oz can diced tomatoes
1 ½ c chicken, chopped and cooked
1 c long grain rice uncooked
1 T Creole Blend * see recipe

Directions:
Directions:
Cook chopped onion, green pepper and sausage in oil over medium heat, stirring constantly until vegetables are tender.Stir in chicken broth, diced tomatoes and chopped cooked chicken. Add uncooked rice and Creole Blend* (See recipe below). Bring to a boil, reduce heat, simmer uncovered for 25 minutes or until liquid is absorbed and rice is tender.

¼ c dried parsley flakes
3 T dried celery flakes
3 T dried thyme
2 T oregano
2 T freeze dried chives
1 T black peppercorn
1 tsp paprika
4 bay leaves
3 dried red chile peppers

Place all ingredients in mini-food processor or coffee grinder. Process until finely ground. Yields 1/2 cup
