4 chicken breasts
1 egg, beaten
flour for dipping
cup grated Parmesan cheese
cup butter
cup Amontillado Sherry

Cooked rice

Directions:
Directions:
Set up dipping stations; flat-ish bowls or rimmed plates with flour, egg, and Parmesan.

Dry each breast with paper towels; dip first in flour, egg, Parmesan.

Brown chicken pieces in hot butter; add sherry.

Cover and let simmer 30 minutes.

Serve over rice.
