Ingredients: 3ozs cream cheese 1 cup ricotta cheese 1 pound feta cheese, crumbled 1 pound frozen phyllo (thawed overnight in the refrigerator) 2 large eggs ½ cup melted butter

Directions:Preheat oven to 350º Cover a cookie sheet with parchment paper Bake 30 minutes, or until golden
Mix cheeses, eggs, and 2 tablespoons melted butter.
Unroll phyllo dough; keep covered with plastic wrap or tea towel
With the long side of the dough facing you, cut into 6 lengthwise strips.
Put a spoonful of cheese mixture on the top right of a strip; fold the left side of the strip at the diagonal to cover the cheese.
Fold like a flag all the way down the strip; brush the finished triangle with butter.

Notes: I had never tasted Greek food, nor did I know anything about it until 1977. We belonged to a "Gourmet Society" with other people from St. Stephen's Episcopal Church in Sherman, TX. One couple had a Polish theme at their dinner. Another had French food. When it was our turn we decided on Greek food. The recipes came from cookbooks in the Denison library. We made a boneless leg of lamb "en croute." We bought a strange bottle with Greek writing on it. We were then introduced to the licorice flavored Greek liquor called Ouzo...
Our next foray into Greek cuisine came when we waited in a two block line to get into the Greek Orthodox Church festival in Houston. Samples of savory and sweet delicacies awaited. We bought a parish cookbook and have since enjoyed many Greek dishes, including the delicious cheese triangles called Tiropita.
