2 Slices of Bacon Cut into Thin Strips
3 Medium Onions Thinly Sliced
6 Medium Red Potatoes Sliced into Inch Chunks
1 Celery Stalk Thinly Sliced
Tsp Salt
Tsp Thyme Leaves
Pepper to Taste
4 Cups Light Chicken Broth
2 Tbsp Chopped Parsley
2 Carrots Thinly Sliced

Directions:
Directions:
Cook bacon in large saucepan until lightly browned. Add onions and cook over medium heat stirring often
until limp but not browned.
Add potatoes, celery, carrots, salt, thyme, pepper, chicken broth, and parsley bring to a boil.
Reduce heat cover and cook for 20-30 minutes or until potatoes are tender.
Puree soup in batches, pour back into saucepan and heat through.
