3Tb minute tapioca
1/8 tsp salt
3 Tb sugar
2 c milk
2 eggs, separated
3 Tbs butter
1/3 c firmly packed brown sugar
3/4 tsp vanilla
Directions:
Directions:
Combine tapioca, salt, sugar, milk and egg yolks in medium saucepan; Mix thoroughly. Let stand 5 minutes.

Melt butter in small saucepan; add brown sugar and heat til bubbly. Set aside.

Cook tapioca mixture over medium heat to full boil, stirring constantly (6-8 minutes)

Mix brown sugar syrup into pudding, stirring vigorously. Add vanilla. Cool slightly.

Beat egg whites to soft peaks. Stir into pudding mixture. Cool 20 minutes.

Serve warm or chilled. Garnish with whipped cream.
