2¼ cups flour
1 tsp baking powder
1 tsp salt
½ cup shortening
1 cup sugar
1 egg
½ teaspoon vanilla
2 Tbsp milk

Fruit Filling
1 cup sugar
1 Tbsp flour
1 cup raisins
1 cup chopped dates
2 Tbsp lemon juice
½ tsp grated lemon
¾ cup water
pinch of salt

Directions:
Directions:
For fruit filling - Blend sugar and flour and combine with remaining ingredients in saucepan. Cook over low heat, stirring constantly until well blended and thick. Boil for 3 minutes. Cool before using in cookies.

Cream shortening and sugar; add eggs. Sift flour, baking powder, and salt together. Add milk and vanilla. Mix well; roll out dough 1/4 inch thick. Cut with a round cutter. Spoon 2 teaspoons filling on top of the circles and top each with another circle. Pinch edges together and cut slit in top. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 10-13 minutes or until lightly browned. Remove to wire racks to cool.
