Chicken Tetrazzini Recipe

1-8 oz package of Vermicelli Rice Noodles
1 onion chopped
2 tbs oleo
2 tbs flour
1 tsp salt
½ tsp pepper
1 large can evaporated milk
1-3-4oz can sliced mushrooms
3 c cooked chicken
1 chopped green pepper
1 c grated sharp cheese
1 qt chicken broth

Boil chicken until done and cut into bite size pieces. This can be done the day before. Cook Vermicelli in chicken broth per instructions on package. Melt oleo in skillet and add onion, green pepper and mushrooms. Sauté until tender. Pour in flour and mix well, add milk, broth, grated cheese, chicken and cooked vermicelli. Stir until mixed well. Pour into baking dish and bake at 450º for 20 minutes.
