In a wide saucepan, combine milk, sugar cinnamon stick, lemon rind. Simmer for 10 minutes. Beat the eggs and salt together in a pie pan. When milk tastes spicy, begin heating a skillet into which poured oil for frying. Dip bread slices into hot milk. Lift out and carefully with a slotted spatula ease into the beaten eggs, covering all sides then slip into the hot grease and fry. Carefully turn and cook on both sides. Serve plain or with syrup and or cinnamon sugar. Great with hot chocolate on a snowy night.
