Spanish Rice Serves 4-6
Ingredients
2 tablespoons of olive oil
1 onion, finely chopped (about 1 cup)
1 garlic clove (minced)
2 cups of medium long grain white rice
3 cups chicken broth
½ cup of chunky salsa (medium not mild)
½ cup of chopped fresh tomatoes
Pinch of oregano
1 teaspoon of salt

1. Heat olive oil in a pot for rice and then add rice and brown.
2. Add the onion and cook until softened, then add garlic and cook for two more minutes then, add broth, tomato, salsa and salt and then bring to a boil.
3. Reduce heat to low simmer and cook rice for 20-30 minutes
4. Remove from heat and let sit for 5 minutes then fluff with a fork or spoon before serving.
